Notes
I like to use a pastry cutter help blend the ingredients. Keep the balls to 1 T because they are dense, rich and yummy! The silicone mini muffin pans are preferred because they pop the cups right out. Keep in the refrigerator or freezer. Ingredients and pans can be found on Amazon or your local grocer.
This can easily be cut in half if you want to start small.
Ingredients
- 2 Cups creamy natural peanut butter, just peanuts and salt, no sugar added
- 1 Cup Monk fruit powdered sugar
- 1/2 Cup hydrolyzed Collagen powder
- 2 Lind Dark Chocolate Bars, 75% or higher.
Instructions
- Mix all ingredients in a small bowl.
- Make into 1 T. balls, using a small melon scoop.
- Put balls on a cookie sheet and freeze hard for an hour.
- Melt the chocolate over low heat.
- Using a small spoon, dip each ball and coat in the chocolate one at a time.
- Place each chocolate coated ball into a silicone mini muffin pan.
- Drizzle any leftover chocolate right over the balls in the pan. No need to waste chocolate!
